For this week, we were out of town all weekend, so our meals had to be quick and simple, but also taste good. We got a few “must have” groceries on Sunday night when we got back into town, and then did another grocery pick-up on Monday for the rest of the ingredients. Not our normal routine, but when you travel, you just have to adjust to what works.
Here’s what we prepped and ate this week to keep things easy and still hit our goals with protein and produce.
Lunches: Chicken Sandwiches + Veggies & Dip
We had to go simple here, as we had almost zero time to meal prep on Sunday. We grabbed some chicken at the store and pan-seared a big batch of chicken thighs, sliced them thin and set up a sandwich station for the week. Lunches were just build-your-own chicken sandwiches, served with whatever fresh veggies we had on hand and a dip of choice (like hummus or ranch).
Here’s what we used:
- Bread or tortillas
- Chicken thighs, pan seared
- Banana peppers
- Pickled onions (we love these right now)
- Cheese (we used provolone)
- Fresh tomatoes
- Condiments of choice (mayo, mustard, hot sauce, etc.)
- Veggies for the side: baby carrots, sliced cucumber, sugar snap peas

Dinner Night #1: Chuck Roast Tacos

We are making these amazing chuck roast tacos this week and doing ground beef tacos for the kiddos. We love tacos, so we are excited to try these!
🛒 Grocery List:
- Chuck roast (~3–4 lbs)
- Taco seasoning
- Garlic cloves
- Onion
- Lime
- Beef broth or water
- Chili powder
- Cumin
- Smoked Paprika
- Tortillas (flour or corn)- we sometimes make our own if we have time
- Shredded cheese
- Optional toppings: sour cream, guacamole, salsa, cilantro
- Ground beef (if doing kid-friendly version)
Dinner Night #2: Chicken Breasts + Summer Pesto Pasta + Watermelon

This summer pesto pasta salad with bacon and corn might be our favorite recipe of the week. We paired it with grilled chicken breasts and watermelon (we love summertime), and it was amazing! The pesto pasta was INCREDIBLE!

- Chicken breasts (~2–3 lbs)
- Pasta (we used orecchiette)
- Fresh corn
- Bacon (we just used a little but you could omit also)
- Cherry tomatoes or sun dried tomatoes
- Pesto
- Fresh Basil
- Greek Yogurt
- Mayo (we used very little and it would be fine to omit)
- Lime or lemon juice
- Olive oil
- Watermelon
- Garlic
- Salt & pepper
Dinner Night #3: Tortilla Pizzas

Okay, these are a STAPLE in the Glarrow household. We haven’t shared before, because quite honestly we’ve never used a recipe. However, we found this recipe, and it seems pretty similar, so we wanted to share. The only difference is we actually pre cook both sides of the tortilla. We put the oven on low broil and toast each side before adding the toppings (make sure to watch them while pre-toasting or they burn fast). We then finish cooking them on about 375 degrees. These are fast, fun, and totally customizable.

- Flour tortillas (large or medium)
- Marinara or pizza sauce
- Mozzarella cheese
- Toppings:
- Meat of choice: ground beef, chicken, turkey pepperoni, etc. are a few of our favorites
- Bell peppers
- Red onion
- Black olives
- Fresh basil
- Fresh oregano
- Garlic
- Spinach or arugula
- Olive oil
- Salt
