It’s meal prep day, and we wanted to share with you what was on the menu. I’ll admit, I am TERRIBLE at following recipes, and even if I do follow a recipe, you can ask Shane or Adda, I typically am changing things, not measuring, and adding my “spin” on it. But, what I’ve done is found some similar recipes to what we made, in case you need some inspiration going into your week. Have fun with meal prep. Try new things. Sometimes mine work, and sometimes they don’t, but I am always up for trying new flavors, combinations, and seeing what happens!

We made one very similar to THIS recipe! We love adding veggies anywhere we can, so we loaded ours with onion, squash, and zucchini. We also added ground turkey for a protein source, and a lot of fresh herbs for flavor! We sprinkled a tiny bit of parmesan on top, and we are set for the week! We made 8 servings total.

So, Shane informed me that maybe it doesn’t look the most appetizing, but this instant pot orange chicken was extremely simple to make, and tastes really good! We’re serving it over our fried rice that we made. Here is the recipe we used this week. This was my first time using this recipe, and I’ll probably make a few changes next go around, but for the first time, I’ll call it a win.

For our fried rice, I just made our regular rice in an instant pot (here’s a simple recipe how to do so). While the rice was cooking, I sautéed (in sesame oil) a bunch of onion, red cabbage, green onion, kale, peas, and carrots until they were nice and browned over medium high heat. I also added in some fresh garlic and soy sauce to add some fresh flavor.

We were going to make elk burgers, but we had a bunch of filets that needed to be used, so we did elk filets in a cast iron skillet (seared 2 minutes per side and seasoned with just salt and pepper), we steamed broccoli in the instant pot for some greens, and then we made these rosemary sweet potatoes. You could easily substitute some turkey burgers in for the elk filets.
